The one idea that makes this work: you don't cook for 40 people at once. You cook in waves, carve immediately, and hold the carved meat in hot stock. Turkey held in warm stock stays succulent for hours and tastes better than fresh-carved. Everything below is built around that.

The numbers

4whole turkeys
5 kg each

20 kg raw → ~9.4 kg cooked meat. Forty people at 180 g each need 7.2 kg. Comfortable margin plus leftovers.

2.5kg dry macaroni
+ 2 kg cheese

Three large trays. Assembled Wednesday, baked Thursday.

3pans pretzel salad
~23 × 33 cm

Must be made Wednesday. It needs overnight to set.

If it's closer to 20 than 40

Halve everything: 2 turkeys, 1.25 kg macaroni + 1 kg cheese, 2 pans of pretzel salad (two, not one and a half — it keeps for days and people take seconds).

Order now — don't wait

Whole fresh turkey is not a Spanish supermarket staple, and the Spanish supply chain gears up for Christmas, not November. In late November you are ahead of the stock. Talk to your butcher in September or October, not the week of.

What to ask for:

The real blocker: fridge space

Four spatchcocked 5 kg birds, uncovered on racks, is enormous fridge real estate. Late November in Málaga runs about 11–19 °C, so a terrace or garage is not cold enough. This is the constraint that will actually bite you. Three ways through:

  1. Brine in shifts — two birds Sunday to Tuesday, two Tuesday to Thursday. Same fridge, staggered. This is the plan below.
  2. Shorten it — a 24-hour dry brine still works well. Do all four Wednesday.
  3. Butcher holds them — salt them at his shop, collect in two batches.

Spain shopping list — and the substitutions

Half of American Thanksgiving does not exist in a Spanish shop. These are the ambushes, with what to buy instead.

Recipe saysBuy in SpainWhere / note
PretzelsSalzbrezeln / lacitos saladosLidl or Aldi. German chains, both in Málaga, reliably stock them. Not a Spanish staple elsewhere. Buy in October — they keep for months.
Cool WhipNata para montar, 35% MGDoes not exist in Spain. Whip real cream with a little icing sugar. Genuinely better.
Jell-O (strawberry)Gelatina de fresa — Royal, Dr. Oetker or HacendadoWidely available. Read the packet for how much liquid it sets and buy enough for 3 litres total.
Fresh strawberriesFresas congeladas (frozen)Late November is out of season. Huelva is Europe's strawberry capital an hour up the coast, but the season is roughly January–June. Frozen is correct here — they're suspended in gelatin anyway. Thaw and drain or the extra liquid loosens the set.
Sharp cheddarCheddar curado, block not slicesSpanish supermarkets carry limited cheddar. El Corte Inglés or Lidl for a 1.4 kg quantity. Buy early — don't leave 2 kg of cheese to the week of. Vacuum-packed block keeps for weeks.
Kosher saltSal marina gruesa / sal gordaKosher salt doesn't exist in Spain, and it isn't interchangeable by volume. Weigh everything in grams. That's why every number here is a weight.
Baking powderLevadura química (the Royal sachets)Not bicarbonato. This goes in the turkey salt rub — it raises skin pH so it blisters instead of tightening.
Evaporated milkLeche evaporada (Nestlé Ideal)Easy to find. Stabilises the cheese sauce so it doesn't split when reheated.
Cream cheesePhiladelphia / queso cremaEverywhere. Full fat, not light.
Charcoal + smoking woodCarbón de encina + oak or holm-oak chunksEncina (holm oak) is the Spanish standard and excellent with poultry. Chunks, not chips.

Countdown

WhenDo
Sept – OctOrder the four turkeys. Buy pretzels, cheddar, charcoal, wood chunks. Buy 4–6 deep trays and heavy foil. Measure your oven tray and your fridge shelves.
SeptemberTrial run. Spatchcock one €6 chicken, dry brine it 24 h, cook it on the grill. Do it once and Thanksgiving stops being something you're nervous about. This is the step everyone skips.
Sat 21 NovCollect bones from the butcher. Make the stock — roast bones dark at 220 °C for 45 min, simmer 4 h with onion, carrot, celery, bay, peppercorns. Strain, reduce to ~4 L, cool, freeze.
Sun 22 NovCollect birds 1 & 2. Dry brine: 50 g sal gorda + 16 g levadura química each, rubbed all over. Uncovered on racks in the fridge.
Tue 24 NovCollect birds 3 & 4. Same brine. Birds 1 & 2 stay in — they're fine to Thursday.
Wed 25 Novmust be today Strawberry pretzel salad × 3. It needs overnight to set.

The turkey

Three levers that matter more than any equipment

  1. Dry brine, never wet. Salt at 1% of the bird's weight, applied days ahead, uncovered in the fridge. Salt seasons the meat all the way through, and the uncovered fridge time dries the skin. Dry skin is the entire secret to crisp skin. Wet brining does the opposite and is why most turkeys are mediocre.
  2. Spatchcock. This solves the fundamental turkey problem. Breast is done at 68 °C, thigh needs 74 °C, and on an upright bird the breast is exposed while the thighs hide. You cannot win. Flattened, everything sits on one plane and finishes together — and it cooks in 80 minutes instead of four hours.
  3. Thermometer, and pull early. Breast out at 66–68 °C. Carryover takes it to 70. Rest 30 minutes.

Per bird

  • 50 g sal marina gruesa
  • 16 g levadura química
  • Rub all over, including under the skin where you can lift it
  • Uncovered, on a rack, fridge, 2–3 days
  • Do not rinse it off. That's your seasoning.

Four birds total: 200 g salt, 64 g baking powder.

Cooking

  • grill Coals banked on both sides, drip pan with water in the middle, bird over the pan. A wide flat bird wants heat from both flanks.
  • Two chunks of oak or encina. Bottom vent half open, top vent fully open over the bird.
  • 175–190 °C at the dome, 80–90 min. Lid stays on — every peek costs 5–10 minutes.
  • oven 220 °C, 70–80 min.
  • Go by the thermometer, never the clock.

Carve and hold — this is the technique that makes 40 people possible

  1. Rest the bird 30 minutes.
  2. Carve it immediately. Don't wait for serving time.
  3. Layer the carved meat into deep trays.
  4. Ladle hot stock over it. Cover tight with foil.
  5. Hold at 60–65 °C — low oven, or an insulated cooler.

Meat held this way stays succulent for hours. Fresh-carved turkey starts drying the second it hits the board. You are not compromising by cooking ahead — you're improving it, and you're removing every bit of timing stress from the day. All four birds get carved in the kitchen. Nobody carves at a table of 40.

Gravy — 4 to 5 litres

On the day: melt 200 g butter, whisk in 200 g flour, cook the roux 3 minutes to lose the raw taste. Whisk in 3.5 L hot turkey stock a ladle at a time, then everything from the drip pans. Simmer 10 min, season hard. Thin with more stock as needed.

A gravy built on deep roasted turkey stock rather than pan drippings alone is the whole difference between good and legendary. Make the stock. It's four hours of doing nothing on a Saturday.

Mac and cheese — 3 trays, serves 40

Ingredients

  • 2.5 kg dry macarrones
  • 1.4 kg cheddar curado, grated
  • 600 g gouda or emmental, grated (for melt — cheddar alone goes grainy)
  • 250 g butter + 250 g flour
  • 3.5 L whole milk
  • 800 ml leche evaporada
  • 3 tbsp Dijon mustard, 25 g salt, white pepper, nutmeg
  • Topping: 300 g pan rallado + 100 g melted butter + 200 g reserved cheddar

Method

  1. Boil the pasta 2 minutes SHORT of the packet time. It keeps cooking in the sauce and again in the oven. This is the single most important step for make-ahead. Drain, don't rinse.
  2. Béchamel: melt butter, whisk in flour, cook 2 min. Add milk gradually, whisking, until smooth and thick. Stir in the evaporated milk.
  3. Off the heat, stir in all the cheese except the reserved 200 g. Off the heat matters — boiling cheese splits.
  4. Mustard, salt, pepper, nutmeg. Season boldly, pasta dilutes everything.
  5. Combine with pasta, divide into 3 trays. Cool, cover, refrigerate — this is your Wednesday job.
  6. Thursday: top with breadcrumb mix + reserved cheddar. 190 °C, 40–45 min from cold, until bubbling at the edges and browned on top. Rest 10 min before serving.

Strawberry pretzel salad — 3 pans, serves 40

Make this Wednesday. It needs at least 4 hours to set, and overnight is better. It is also the only dish here that needs zero oven time on Thursday, which is exactly why it earns its place on this menu.

1 · Crust

  • 600 g pretzels, crushed to coarse rubble (not dust — you want texture)
  • 500 g butter, melted
  • 150 g sugar

Mix, press firmly into 3 pans. 180 °C, 10 min. Cool completely before the next layer — warm crust melts the cream.

2 · Cream layer

  • 675 g cream cheese (3 tubs)
  • 600 g sugar
  • 900 ml nata 35% MG, whipped stiff

Beat cheese and sugar smooth, fold in the whipped cream. Spread edge to edge, sealing right to the sides of the pan. That seal is what stops the gelatin leaking down and turning the crust to sludge.

3 · Strawberry top

  • Gelatina de fresa for 3 L of liquid
  • 1.5 kg strawberries, thawed and drained

Make the gelatin, stir in the berries, then cool it to room temperature and slightly syrupy before pouring. Hot gelatin melts straight through the cream layer. Chill 4 h minimum, overnight ideally. Cut into squares cold.
